Is it really S3-compatible?

Yes. Offkeep implements the S3 API with SigV4 authentication, so AWS CLI, SDKs, rclone, and other S3 tools work against it as-is.

What happens to my data?

Objects live in the region you choose, stored on encrypted backing storage. You can delete buckets or objects at any time, and your usage is metered transparently so you always know what you're paying for.
